Mom’s Ham and Rice Casserole (2/25/12)

Serves 8-12 (Recipe has been doubled.)
  • White Sauce
    • 1/2 cup butter
    • 1/2 cup flour
    • 3 cup milk
  • 1 1/3 cup mayonnaise
  • 2/3 cup sour cream
  • 1 tsp salt
  • 2 - 4 tsp chopped onion
  • 1 cup chopped celery
  • 2/3 cup Parmesan
  • 6+ cups cooked rice (mix of white, brown, and forbidden rice)
  • 2 cups cubed ham
  • 1 head chopped broccoli
  • 6 chopped carrots
  • 1 cup peas

Make white sauce.  Remove from heat.  Mix all ingredients in a large bowl.  Mix thoroughly.  Pour into a greased casserole dish.  Freeze.

Thaw completely.  Cover and bake for 30 minutes at 350.  Uncover.  Bake for 30 more minutes until brown on top.

  1. I think this time we added too much extra stuff. I liked all the extras, it just needed more sauce. :)
